Birthday Series: The Best Chocolate Cake Recipe!

Cake
Ingredients:
2 Cups Boiling Water
1 Cups Sugar
1 1/2 Cups Buttermilk
1 1/2 Tsp Vanilla Extract
1 Cup Vegetable Oil
2 Eggs
1 Tsp Salt
2 Tsp Baking Soda
1 Tsp Baking Powder
2 Cups Flour
3/4 Cups Unsweetened Cocoa Powder

Preheat oven to 300 degrees. Boil the water and add the sugar. Stir until the sugar is dissolved. Set aside to cool. Once cool mix the sugar water, buttermilk, vanilla extract, oil, and eggs together. In a separate bowl mix the salt, baking soda, baking powder, flour, and cocoa powder. Mix the dry ingredients into the wet. (This is a very wet cake mixture) Pour into 2 9x9 pans or divide into cupcake tins. Bake for 22-25 minutes until done.

Icing
Ingredients:
2 sticks of unsalted butter
6 oz. semi-sweet chocolate chips
1/2 cup heavy whipping cream
2 1/2 cups powdered sugar

In a saucepan melt the butter, chocolate chips and cream. Once melted and smooth, add the powdered sugar slowly. Let icing sit (or refrigerate) until thick enough to frost the cake. This makes a very fudgy, delicious icing.

Healthified Pimento Cheese!


Big thanks to my MIL for passing this along to me!


8 oz. fat free cream cheese
7 oz. fat free shredded cheddar cheese
2 oz. pimentos with juice
2 tbsp. reduced fat mayo
1 tsp. sugar
salt and pepper

Mix with a mixer. Serve with crackers and celery.

My Favorite Tuna Salad Recipe

Tuna Salad:
  • One can of tuna packed in water
  • One hard boiled egg
  • One tablespoon yellow mustard
  • 1/8 tsp lemon pepper seasoning
  • Salt and pepper to taste
Spread laughing cow cheese on Townhouse crackers and top with the tuna salad

Afternoon Snack = Apple Pie!

Crustless Apple Pie

1 Medium Apple
1 Packet Splenda
1 tbsp Cinnamon


Core the apple and slice. Arrange on a microwave safe plate. Sprinkle the splenda and cinnamon on the apples. Microwave for 3-4 minutes.

Total Calories: 81

This was so good for an afternoon snack!! Low cal plus cinnamon and apples are metabolism boosters. I ate this with one piece of sugar free dark chocolate.
